Organic Orange Oil
I discovered this organic orange oil recently when it was a tiny ingredient in organic coconut chocolate. It is amazingly subtle. I managed to buy the mandarin and also lime flavours and look forward to getting my hands on the orange. I'll be using it to flavour yogurts, panna-cottas and heaps of other recipes. Wray Organics generally carry these products. Highly recommended........

COCONUT YOGURT
Have you tried the latest coconut yogurts in the marketplace. There are 2 brands here in Brisbane. One has too many additives and the other is a tad expensive - but delicious!!
Here's a simple way of making your own
COCONUT MILK YOGURT
Makes 1 litre/1 Quart
- 1 litre full cream coconut milk
- 3 Tbs natural yogurt
- 2 tsp gelatin powder (Great Lakes)
- Heat the coconut milk in a heavy pot until the milk reaches 180°F/80°C - the temperature just before boiling point.
- Do not boil coconut milk as it will curdle.
- Keep stirring the milk whilst heating.
- Allow the milk to cool around 115°F/45°C.
- Add the 3 tablespoons of yogurt or the appropriate amount of yogurt starter.
- Mix the gelatin with a little coconut milk before combining with the milk. Stir well.
- Incubate for 24 hours at around 110°F/43°C in a clean oven proof jar or dehydrator and then place in the refrigerator for at least 8 hours to set.
- Stir yogurt to mix in some of the gelatin that may have settled on the bottom.
Raw Fermented Mango Chutney
Mango season is in full swing here in Queensland. Fruit hanging off trees everywhere. Here's a great little side dish to relish!!
3 cups firm mangoes
1 tBl fresh grated ginger
1 tBl fresh grated turmeric
1 red pepper, chopped
1 Jalapeno pepper, de-seeded and chopped
1 small red onion, chopped
½ cup fresh mint leaves, chopped finely
1 bunch coriander, finely chopped
½ cup fresh lime juice
¼ cup fresh raw whey
Pinch sea salt
Water as needed
1 tBl fresh grated ginger
1 tBl fresh grated turmeric
1 red pepper, chopped
1 Jalapeno pepper, de-seeded and chopped
1 small red onion, chopped
½ cup fresh mint leaves, chopped finely
1 bunch coriander, finely chopped
½ cup fresh lime juice
¼ cup fresh raw whey
Pinch sea salt
Water as needed
Mix mango with ginger, turmeric, peppers, onion, mint,
coriander and salt and place in wide mouthed jar. Press down lightly to gently
compress (use fingers or heavy spoon)
Mix remaining ingredients and pour into jar. Add water if necessary to cover ingredients. Make sure your ingredients are 10cm below the top of the jar to allow for expansion.
Cover tightly and leave at room temperature for 2 days before refrigerating.
Eat within 2 months as there is a lot of sugar in this ferment and it will turn quite alcoholic quite quickly…….
